Vegan/ Dairy Free Chocolate Cupcakes

Ingredients
1 ¼ cup Self Raising Flour
1 cup sugar (ideally low GI)
⅓ cup cocoa powder (nestle or dark choc is best)
1 cup warm water
1 teaspoon vanilla extract
⅓ cup vegetable oil
1 teaspoon white or apple cider vinegar
1 teaspoon baking soda (optional)
½ teaspoon salt (optional)
Utensils
Mixmaster, Oven, Silicone Muffin and/or Mini Muffin Pans, Cooling Rack, Skewer to test.
Method
Preheat Oven to 180 degrees C; Mix the ingredients together in mixmaster. Bake for 10 minutes (mini muffins) or 15 mins (regular muffins), test using skewer if cooked. Cool on a cooling rack.

Ingredients
35g butter, melted
6 eggs
3/4 teaspoon (3g) salt
160mls milk
Utensils
Mixmaster, bowl to crack eggs into, somewhere for egg shells.
Deep clear pyrex dish OR 2 aluminium foil dishes (16cm x 25cm). If doubling the receipe, use more than one small dish rather than a larger dish.
Method
Preheat the oven to 180 degrees C.
In a large bowl, whisk together all ingredients
Pour egg mixture into the baking dish.
Bake uncovered for 10 minutes, then stir, and bake an additional 10 to 15 minutes, or until eggs are set. Serve immediately.

Yum! Worked well after transfering to shallow clear glass pan (still liquid after 20 mins, transfered to shallow pan and cooked well after an extra 10 mins).

1 Cup Greek Yoghurt
1 Cup Self Raising Flour
Plain Flour

Mixmaster with Dough Hooks, Ice Cream Scoop or Spoon, Silicon Spatula, Chopping Board (s), Lightly floured Non Stick Oven Mats and Oven trays (if cooking immediately) OR Lightly floured Baking Paper, Freezer Bags & Containers for Freezer (if freezing).
Method
In a mixmaster, combine the flour and yoghurt and kneed with dough hooks.
Use an icecream scoop to collect a ball of dough, cover in plain flour, roll out into a mini pizza base (to make sure it doesn’t stick to anything, use lots of plain flour).
Transfer to Non stick mat or Baking Paper.

Somewhere to throw out egg shells
Method
Pre heat Oven (180-200 degrees)
Spray muffin tray and foil with spray oil
One at a time – Crack an egg into a bowl, then pour into individual Muffin pans
(do at least one yolkless one for Lisa)
Lay bacon on foil/baking mat
Put Bacon and Eggs in oven for 15-20 min
Cut English Muffins, butter or spray with oil and lay 2nd baking tray. Add to oven with 10 mins to go.
Serve.

Pre heat Oven (180-200 degrees)
Boil Kettle
Line Oven tray with foil
Lightly spray tray with cooking oil
Add 100g per person of diced chicken or beef to oven tray, and cover meat in Marinade; or follow oven chicken directions
Add 100g chips per person to oven tray
Bake in oven for 15 mins – 20 mins
Optional, in Saucepan use water from the kettle to Boil Vegetables for 10 mins, Drain Vegetables (or add extra water at start and boil on low for entire time food in oven for)

Cook according to packet
Cut rolls and add spread
Chop and wash lettuce and tomato

When chicken cooked, add chicken to rolls and serve.
